This could perhaps be achieved using methods similar to what you have already described. I'm sure you understand what I'm getting at, on the whole. You may find it beneficial to take a look at SunVox, which is an audio-tracker with (IMO) a very small-screen-/touch-friendly interface. I've done a reasonable amount of stuff with it, and while it's not perfect it is surprisingly effective, and allows a good fast workflow.
